What You Need To Know About Walleye

Walleye is a freshwater fish that can be found
in all the lakes around our remote Outpost Cabins.

There are two types: the yellow Walleye, and a subspecies called the blue Walleye that is native to the southern Great Lakes, and can be caught on Mosher Lake.

These large, olive/gold colored game fish are called “Walleye” because their large eyes reflect light like the eyes of a cat. Growing up to 20 pounds, these tasty fish are popular with anglers and their hungry friends and family members on shore!

Walleye Fishing Tips For Spring

If you go fishing for Walleye in the springtime, you’ll find them gathered near the shore, around sand bars and wild rice beds, in weedy areas and rocky areas, as long as there‘s a sandy bottom. You’re more likely to find small males in shallow areas where there’s more spawning.

Big females are usually found in deep water in the daytime. They spawn on sand and in river current in the springtime, and they’re really aggressive at this time of year. It’s easy to catch Walleye in the spring because they’ll go for almost any lure you use.

At night, you’ll have better luck trolling for really big (10+ pounds) female Walleye in shallow water. You can find them at the spawning beds or chasing minnows near the shore. You’ll want to troll along slowly right along the weeds or near the shore with your Junior Thundersticks or Original Floating Rapalas in Fire-Tiger, Blue or Silver. You’ll need to use a lot of line, and you’ll have good luck if you can stop in an area that has weeds and a sandy bottom or a sand bar.

Walleye Fishing Tips For Summer

If you’re fishing for Walleye on a warm summer day, you’re more likely to find them in very deep water and shady places (like in weeds). In any part of the country, you’ll want to use your white twister-tails this time of year, and you’ll need to have a good supply. If you’re fishing in the north, you should use unscented twister-tails. You could also use salted minnows or salted bait in the north.

On a summer’s evening, you’ll find the big female Walleye eating along the shore, and you can troll along the shore with smaller lures, same as in the springtime. If you want to catch them during the day, you’ll need to jig for them in a good deep spot.

Best Walleye Lures

You can troll along the shore or cast with lures like shallow running shad-raps or crank-baits. Some of the best Walleye lures are Junior Thundersticks and Original Floating Rapalas. The best colors are Fire-Tiger, Blue and Silver.

Jigging For Walleye

When you go jigging for Walleye, you can use a one-eighth or one-quarter ounce jig. It can have a black, green, yellow or white twister-tail. Walleye like white twister-tails best, and they’ll go for them any time of the year. Usually, you’ll get more strikes if you add a little bit of worm or some Walleye gullet, but in the springtime, you don’t have to. If you want to just catch a few big Walleye in the daytime, go on out to the deep water for the females.

When jigging for Walleye in the summertime, you could go out on shoals or rocky points where there’s deep water and steep drop-offs. You could also try jigging in or near thick weeds. In summertime, you’ll find small Walleye in the one-four-pound range up close to shore. Just like in springtime, the big females stay out in the deep water, but in the summertime, they stay very deep. If you’re lucky enough to find a good, deep spot where a lot of big Walleye hang out, you can have a good day’s fishing without moving around too much!

Trolling For Walleye In Open Water

On some occasions you can find really big, trophy-size Walleye in the thermal layer in open water. They like to hang out there and feast on schools of smaller fish, and they aren’t easy to find. In fact, you’ll have to have a depth finder to locate them by locating the schools. In the north, you’ll usually find them at about fifteen to twenty feet depth in open water.

Once you find your Walleye, you can troll for them using deep diving lures like Husky Jerk in brown or silver. You could try blue and Fire-Tiger, but brown and silver seem to do better in the open water. You’ll need to determine how much line you need to use. Look for lures that include a chart showing depth-to-line-ratio to make this easier.

When you’re trolling for Walleye in open water at extreme depths, it’s good to use a three-way-swivel rig with a worm harness. Slow back-trolling is the best way to catch a monster trophy fish. You’ll sometimes find these big Walleye near the shore in very deep holes. The tell-tale sign is an area that has dense weeds and a sharp drop-off. Troll there, and you’re sure to catch a monster Walleye!

You will be eating walleye so often, it’s really good to be prepared to catch fish in advance with an entire list of walleye recipes so you can enjoy every nuance of the delicate, delicious flavor of walleye!

Three Common Walleye Recipe Ingredients

Many of the walleye purists who come fishing with us year after year, just bring bricks of butter, salt and pepper… they don’t really have any walleye recipes. Lots of people rely on that the good old traditional crushed cornflakes and egg, and many people like the simpler recipes with just flour and spices mixed in. They may dip the walleye in egg, then put the walleye fillet in a bag and shake it up.

The walleye is coated delicately with the flour and then pan fried, barbecued or baked. The best walleye recipes provide different accents that you can add to this flour mix to bring out different subtleties in the the flavor of the walleye fillet.

Cooking Walleye In The Middle Of No-Where

So, to make these walleye recipes work for you on a remote fishing trip in the deep wilderness of Canada, the best thing to do is to prepare in advance.

Put your spice mixes together into plastic bags. Then you can put the walleye meat into the plastic bag with the spice mix, blow some air into the bag, shake them all around so the walleye is coated.

Take the fish out and cook it immediately and zip the bag closed to keep the flour and the spice mix as fresh as possible throughout your trip. This can get messy, depending on your fish coating or batter mix, so come prepared with more bags with smaller amount of fish coating in each.

Butter, Vegetable Oil or Olive Oil?

The debate rages on. We say, do the taste test! The difference between cooking your walleye recipes in butter or cooking your walleye in vegetable oil or cooking your walleye in extra Virgin olive oil is very important and you may want to bring all three of these cooking aids along with you and try walleye in each of them and see which one is your favorite!

Baked Walleye Recipes

Our Outpost cabins are equipped with a stove that has an oven so you can cook your baked walleye recipes in a way that you are familiar with from baking fish at home. This means you can use any of the recipes that you use for halibut or soul or any fish that you buy from the store and you can bake your walleye in the oven just like you would at home.

Rainy-Day Oven Barbecue Walleye

Ingredients

12 walleye fillets
4 tablespoons butter
1 tablespoon onion powder
6 tablespoons brown sugar
3 tablespoons Worcestershire sauce
1 1/2 cups ketchup
1/2 cup water
3 tablespoons prepared mustard

Directions

1. Preheat oven to 425 F.
2. Melt butter in a small saucepan, wisk in onion powder, sugar, Worcestershire sauce and mustard. Dilute ketchup with water and add. Simmer for 15 minutes, stiring often.
3. Place walleye fillets in a shallow roasting pan. Pour saucepan mixture over walleye. Bake, uncovered, for about 45 minutes and the walleye is cooked white all the way through.

Ginger-Orange Baked Walleye

Ingredients

1/3 cup frozen orange juice concentrate, thawed and undiluted
4 tablespoons fresh lemon juice
1/3 cup hoisin Chinese dipping sauce
1 tablespoon olive oil or butter
1/3 cup sugar
3 tablespoons fresh ginger, peeled and minced
3 cloves fresh garlic, minced
4 pounds of fresh walleye fillets
4 medium red onions, thinly sliced

Directions

1. In a large, resealable bag, mix the orange juice concentrate, lemon juice, hoisin sauce, vegetable oil, sugar, ginger, and fresh garlic. Add walleye fillets, seal, and shake to coat evenly. Refrigerate overnight.
2. Preheat oven to 400 degrees F (200 degrees C). Line a large baking sheet with aluminum foil.
3. Spread walleye on foil with marinade, and bake for 45 minutes, until brown and shiny and the walleye meat is white all the way through.

 

Kashabowie Outposts Thai Walleye Special

Ingredients

5 pounds fresh walleye fillets
1 cup chicken broth
1/2 cup white sugar
1/4 cup fish sauce
1/4 cup crushed garlic
1/4 cup finely chopped jalapeno chile peppers
2 tablespoons cornstarch
3 teaspoons paprika
1 tablespoon olive oil

Directions

1. Preheat oven to 400 F, or preheat the barbeque on the deck to high heat,
2. Place walleye fillets on a non-greased cookie sheet. Bake in the preheated oven for 45 minutes to 1 hour, turning once, until golden brown and the walleye meat is cooked white all the way through, or grill walleye for 10 to 15 minutes, or until meat is opaque all the way through. Move to serving dish/platter.
3. In a medium skillet saute garlic and jalapeno peppers in olive oil until soft. Add chicken broth, fish sauce, paprika and sugar. Add cornstarch and let thicken. Stir all together and pour over freshly cooked walleye fillets. Enjoy the unique Thai Walleye Special!

Sticky Japanese WalleyeIngredients

5 pounds walleye fillets
2 egg, lightly beaten
1 1/4 cup all-purpose flour for coating
1 cup butter
4 tablespoons soy sauce
3 tablespoons water
1 cup white sugar
1/2 cup white vinegar
1 teaspoon garlic powder, or 2 cloves fresh chopped garlic
1 teaspoon salt

Directions

1. Preheat oven to 350 degrees F (175 degrees C).
2. Cut walleye in strips, dip in egg and coat with flour.
3. Heat butter in a large, deep skillet over medium-high heat. Fry walleye until light brown and cooked white all the way through. Place in a shallow roasting pan.
4. In a small bowl wisk together the soy sauce, water, sugar, vinegar, garlic powder and salt. Pour over walleye.
5. Place in a shallow roasting pan of walleye into the preheated oven for 30 to 45 minutes, basting walleye with sauce often.
6. Remove from oven and let it stand until everyone has had another beer.

Grill-Mister’s Ultimate Walleye Fillets

Ingredients

Walleye:
1/2 cup soy sauce
1/2 cup Italian salad dressing
4 pounds walleye fillets, cut in strips or in filletsSauce:
1/3 cup butter
1 1/2 teaspoon soy sauce
1/4 cup Frank’s RedHot® hot pepper sauce (or to taste)

Directions

1. Combine 1/2 cup soy sauce, Italian dressing, and walleye fillets in a large, zip-top bag. Close bag and marinate in the refrige 4 hours to overnight.
2. Preheat the barbeque on the deck to medium heat. In a small saucepan, melt the butter. Stir in the soy sauce and the hot pepper sauce. Turn off heat and set aside.
3. Remove the walleye fillets from the marinade and pat dry. Cook the walleye on the preheated grill, turning occasionally, until the walleye is well browned and cooked white all the way through, 20 to 25 minutes.
4. Place grilled walleye in a large bowl.
5. Pour butter sauce over walleye fillets; or use as dip for walleye strips.

Deep Fried Walleye Recipes

Each of our Outpost cabins are also equipped with a deep fryer so you can light up the propane-heated deep fryer, and deep-fry your walleye! Deep-fried walleye recipes can provide variety of particularly delicious ways to eat this fish.

Easy Beer Batter Walleye

Ingredients

1 cup flour
1 teaspoon garlic powder
1 egg, beaten
1/2 teaspoon fresh ground black pepper
1 1/2 cups beer

Directions

In a small mixing bowl whisk together flour, egg, garlic powder, and black pepper.
Stir in 1 cup beer, then add more beer slowly to obtain your desired batter texture.

Stovetop Deep Fried Walleye

Pour oil to a depth of 1 1/2 inches into a large deep skillet. Heat over high heat to 375° F.

Outdoor Propane Deep Fryer

Heat Oil to 375° F.

Grilled Walleye Recipes

We also provide propane barbecues outside each of our cabins, so you can have beautiful barbecued fish and test out your walleye recipes in the remote wilderness of Canada! Simply light the barbecue, follow the recipe, and grill your walleye to perfection. Use the recipes below to try some variety with your walleye – and you’ll be surprised that the range of flavors from fresh walleye when you try these different grilled walleye recipes.

Sweet Spicy Grilled Walleye

Ingredients

6 walleye fillet, cut into strips, soaked in lake water.
1 1/4 cups Louisiana-style hot sauce
3/4 cup butter
1 cup honey
1 pinch garlic salt
Fresh ground black pepper to tase
1 teaspoon cayenne pepper, or to taste

Directions

1. Preheat the barbecue on the deck of the outpost cabin to high heat.
2. Lightly oil the grill grate. Grill the walleye 4 to 8 minutes on each side, or until fish is opaque. (You can deep fry or bake the walleye instead if you want to, but it is best when grilled.) Remove walleye to a large roasting pan.
3. In a deep-dish frying pan over medium heat, mix the hot sauce, butter, honey and seasonings. Simmer about 10 minutes, until blended and heated through. Pour the sauce over the grilled walleye strips and stir lightly to coat.
4. Serve immediately. Eat unfinished portions.

Lemon Dijon Grilled WalleyeIngredients

1/3 cup extra-virgin olive oil
4 teaspoon fresh lemon juice
3 tablespoons Dijon mustard
6 cloves garlic, chopped and crushed
2 teaspoons salt
1 tablespoon freshly ground black pepper
3-4 pounds fresh walleye, in full fillets, or cut into strips

Directions

1. In a large bowl, stir together the olive oil, lemon juice, mustard, garlic and spices. Add walleye, cover, and marinate in the propane refrigerator, provided at each of our outpost camps, for an hour or longer. Stir the walleye occasionally to ensure an even marinate.
2. While you preheat the barbeque on the deck to high heat, prepare the marinate for basting the walleye. Drain marinade from walleye into a small saucepan. Bring the marinate to a boil, stire and simmer for 5 minutes, then set aside for basting.
3. Lightly oil the grill grate. Grill walleye for 10 to 15 minutes, or until meat is opaque all the way through. Turn frequently and baste with the marinade during the last 5 minutes.

Pan-fried Walleye Recipes

Another important recipe-set – the pan-fried walleye recipes – you are prepared for shore lunches! There’s really nothing like it. If you think about it – how many times in a year do you get a chance to sit on a beautiful shoreline in the peaceful wilderness on a private lake and cook up walleyes fresh from the lake?

 

Trappers Fried WalleyeIngredients

3-6 Tablespoons Butter
Salt
Pepper
4-7 pounds fresh walleye

Directions

1. Melt butter in a large deep dish cast-iron pan.
2. Add walleye fillets, salt and pepper to taste.
3. Cook walleye for 6 to 10 minutes, or until meat is white and flakes easily with a fork.

Dad’s Cornflake Batter Walleye RecipeIngredients

3-6 Tablespoons Butter
3 Eggs
2 cups finely crushed Cornflakes
1 pinch of salt
3 lemons
2 pinches fresh ground pepper4-7 pounds fresh walleye

Directions

1. Melt butter in a large deep dish cast-iron pan.
2. Crack eggs and whisk. Dip walleye in eggs then shake inside bag of crushed cornflakes to coat.
3. Add walleye fillets to pan and fry, salt and pepper to taste.
4. Cook walleye for 6 to 10 minutes, or until meat is white and flakes easily with a fork.
5. Cut lemons into quarters and squeeze on cooked walleye before eating.

We are very excited about the opening of fishing.

The water is low and with the early ice out and warm water temperatures the Walleye and Northern are going to be hitting hard. We have started opening our camps and have noticed very low water south of the base.

We were at Loganberry lake and found the water to be at mid summer levels. The bush is very dry so having camp fires would be inadvisable even when there is no fire ban currently in effect. Bass fishing in fact all types of inland lake fishing should be Dynamite.

The best bet in early spring walleye is trolling, so bring minnows to put on a jig, spinner jig, or split-shot lures.

Spring is a great time to bring the family out  and try simple techniques for spring walleye fishing from shore due to the walleye being in cold, shallow water,  for example a river mouth.

Get hooked on the thrill of reeling in a 10 lb. Walleye!

As water temperatures warm in late spring and early summer of Canada, pack a spinner rig to use with minnows, worms and leeches, or crankbaits such as Shad Raps, Wally Divers, and Redfins does the trick. A good trolling motor is always a great help.

In the spring, select a 1/8 to 3/8 ounce jig with a soft plastic twister tail or shad bodies, marabou feathers or bucktail. Attach a minnow, worm or leech.

After 25 years of fly-in fishing at Kashabowie Outposts, Rich Koenig has trophy fishing down to a fine art.

“There’s always the potential of a giant fish,’ said Koenig, who along with brother Al brings groups of friends and business clients to Wapikaimaski Lake each year for Walleye in excess of 10 lbs. Primarily catch and release, Koenig said the quest is always to catch the ‘giant,’ and capture the moment on camera.

Because their trips are usually only four to five days long (he alternates between Wapikaimaski and Mosher Lake, where the group pursues large Northern), Koenig’s group is serious about fishing. “It’s a concentrated trip. We fish heavy-from morning until night.”

If trophy fish is what you’re after, Wapikaimaski Lake doesn’t disappoint, said Koenig. “I consider it a really good lake to that effect. It’s a huge lake -a totally different type of fishing.” A 20 mile long lake, it has many hidden bays and islands and fast water.

An added asset is the remoteness and the abundant wildlife. In his many trips to Wapikaimaski, Koenig says he has seen everything from otters and moose to two Caribou who crossed in front of his boat–making for some incredible photographs.

The four bedroom cabin offers “excellent accommodations” for up to 12 occupants and offers everything you need, says Koenig.

And thanks to radio phones (one of the new services added over the many years he has been a guest), “if you run out of anything, they’ll fly it in. They pay a lot of attention to their guests.”
Which means all there is to think about is finding that giant.
